I don’t know about you, but I love easy recipes. Especially when they’re desserts!
Today we’re making some super yummy and super easy Peanut Butter Chocolate Chip Cookie Bites. This recipe is a small batch as it only makes 6, but you could double it if you wanted a whole dozen.
My small family loves small batch recipes so I usually search for those so none of the treats go to waste π
These bad boys are so easy and have minimal ingredients! They also have no flour whatsoever!
The star of this recipe is Crazy Richards Peanut Butter Powder! This stuff is so yummy and taste just like the real deal peanut butter. Only this stuff has no added sugars, is gluten free, and salt free!
Ingredients:
3/4 Cup Peanut Butter Powder
1/4 Cup Water
2 Tablespoons of Butter
1 Teaspoon of Vanilla Extract
1 Egg
1/2 Cup of Stevia (or another sugar substitute)
1/2 Cup of Chocolate Chips (I used semi-sweet)
Directions:
Preheat over to 350F
Combine all wet ingredients in a bowl and mix well with a fork
Add in dry ingredients one at a time
Stir batter until it thickens to a consistency similar to a thick cake batter
(Should the batter be too runny, try adding another scoop of PB powder)
Pour in chocolate chips and stir until well blended
Pour batter into mini muffin/brownie pan greased with cooking spray
Bake for 12-15 minutes or until firm/golden on top!
FYI: Be sure to let them cool for 10-15 minutes before removing them from the pan.
As the recipe shows, these are so easy and the perfect sweet treat for any time! Great for lunch box desserts or a late night snack π
