Thinking Out Loud: Work, Work, Cookies…

Hi friends!

img_6383Happy Thursday! I hope y’all have had a great week thus far. My week has been filled with lots of work, e.g. yard work, school work, life work (that counts right?). I don’t really know what my weekend will hold, but I’m hoping for a little R&R 😉 I’m not complaining, though. I enjoy being busy. Today I’m gonna open up my laptop and do some Thinking Out Loud

I’m A Cookie Monster.

I love baking and I love food. So, whenever I find a yummy recipe I get super stoked. I’ve been loving these 3 ingredient vegan cookies. They’re SO GOOD! All you need is bananas, oatmeal, and a spice of your choice. I used cinnamon in mine and boy were they yummy. They’re kinda like banana nut muffin meets banana nut bread. Side note: I recommend you store these in the fridge since they’re banana based cookies. Otherwise, they won’t last more than 2 days in the cookie jar.

 

Earth Science = CONQUERED!!!

After several exams, over 950 pages of reading, and lots of late nights; I finally finished my Earth Science text book. It was kinda cool learning about our planet and solar system, but it gets a little old after 100 pages – if I do says so myself. Overall, my final grade was an A and I’m done with the class for good. Whew!

 

Little acts of kindness.

A couple weeks ago I was going through my emails and saw an email from Starbucks saying that I had an e-gift. This was unexpected considering I had no idea who could have sent it to me. When I opened the email I saw that it was from a Roofing Company that I’d never heard of or worked with before. They sent me a $5 Starbucks gift card and said they hoped it would brighten my day (which it totally did). I know to some this may seem minuscule, but to me it wasn’t. How these people got my email, I have no clue. Why they sent me the gift card, I don’t know that either. But, their small act of kindness definitely put a smile on my face. A great reminder that we should spread love to others. No act of kindness is too small ❤

 

Snapchat.

Well, my fellow readers, I did it. I made a Snapchat! As if I didn’t have too many social media accounts already. Oh, Edye. When will you learn? I’ve been playing around with it ever since I made my account and I think I understand 70% of it so far. It’s pretty fun and now I can finally use all the filters I see other people using 😀  If you wanna see my “snaps” follow me @edyenicole

  2. What a nice surprise, receiving a Starbucks gift card! I love little acts of kindness like that. It’s amazing how something as small as $5 can brighten someones entire day!

    I love snapchat! It’s definitely not user friendly at first, but once you get the hang of it, it’s super easy, and just really fun!

    My favorite cookie would be a peanut butter blossom for sure.

    I think that is awesome about your $5 gift card surprise, that’s amazing, truly! And grats on getting through Earth Science. I remember it well – I think I was in high school when “science” formed into different sciences – Biology, Earth Science, ect. Yes, I am old like that, haha.

    Funny you mention cookies – I literally JUST made peanut butter cookies and washed my hands and sat down to read blogs and yours was my first to read. They’re not my favorites, but I had everything on hand. My FAVORITE two kinds of cookies are Russian Tea Cookies (popular at the holidays, very nutty round balls with powdered sugar on top, and my other favorite is White Chocolate Macadamia – yum yum yummmmm!)

    Thanks for the easy 3 ingred. cookie/bar recipe. I was a vegetarian for 32 years and a vegan 6 of them – I would have loved that recipe back in the day! But my 17 year-old niece is now, so will share that recipe with her too!

  11. I have said it before that Cookies are my Kryptonite! I could eat well all week but give me a plate of chocolate chip cookie and all is lost. I have not tried snapchat yet I know everyone is heading that way but like you said I just can’t bring myself to fit anymore social media in my life. Maybe next month! Will have to try out your 3 ingredient cookies they sound healthy, Maybe when I eat the whole batch I won’t feel so guilty..Lol
