Hello all! Today I’m coming at you with my 1st recipe post 🙂 I’m super excited to share this “Okie Salad” with you guys. I’ve made this for years and my family loves it! My grandma got so excited when she knew I was planning this post. She loves being my taste tester 😉 This recipe is super simple to make and has been in my family for three generations. It’s not your usual “salad” per say, but it’s perfect for the summer time (or anytime). Hope y’all enjoy!
Okie Salad
Ingredients:
1 green bell pepper (approx. 1 1/4 cups)
2 roma tomatoes (approx. 1 cup)
1/4 cup onion (add more if you’d like it spicier)
1-2 teaspoons hot sauce
3/4 cup low fat Italian salad dressing
salt and pepper (to taste)
Instructions:
Start off by chopping the bell pepper, tomatoes, and onion; then combine them in a bowl.
Add the Italian dressing and stir until the veggies and dressing are combined evenly. Check and see if you want to add more dressing, some people prefer it with less/more.
Mix in hot sauce, salt, and pepper. This is something I recommend you measure according to your personal preferences.
Lastly cover the bowl or put this in a Tupperware container and let it chill in the fridge for 2-4 hours.
